Pie Bird Pie Baker

Do you know the purpose of a piebird? When a delicious pie is baked, the baker must allow for steam to escape.  Sometimes, a few cuts or holes in the crust does the trick, and sometimes, a piebird sits in the middle of all that hot fruit to “blow off steam.”
If the steam can’t escape, there WILL be bubbling over. This means an ugly pie, stinky, sticky mess to scrape off the bottom of the oven.  A piebird (or pie vent) allows steam to escape from a pie. This prevents the pie filling from bubbling over.
